JM Estrada presents the rotary fermenter without oxygen input, a complete system to create controlled environmental conditions such as: temperature, pH, oxygenation, gas concentration (O2/CO2), pressure, agitation, among others; which favor the growth of microorganisms to ferment and oxidize, allowing the sugar to be taken from the mucilage and the coffee pulp and transformed into lactic acid or alcohol (if yeasts are used), these acids generate oxidative processes that will reach the almond , producing exceptional coffees with unique flavors of high added value.
